Il Colmetto’s cuisine is designed, first and foremost, to be homey, with its strong roots in the farming hospitality tradition of its building. Almost all of the raw materials used are made by the farm itself in accordance with the principles of sustainability and seasonality.
Special attention is paid to using elements in their entirety, reducing leftovers as much as possible in order to accord each individual raw material the respect it deserves, making for interesting flavours from even the most unexpected elements.
The menu is changed weekly and takes the form of tasting options making the most of the technique, passion and quest for excellence so characteristic of the area’s culinary culture.
