Cascina San Pietro, a small artisan winery run by the Pecis family, has been farming and making wine since 2001. Extending over 8 hectares of land on the Franciacorta wine route, Cascina San Pietro produces 40,000 bottles a year according to an integrated viticulture model, respecting the rules of the land.
On the Cascina San Pietro winery, the grapes for Franciacorta and Curtefranca Bianco (white) wines are generally harvested towards the second half of August; the grapes are picked by hand, placed in 15 kg crates to maintain their integrity and transported to the winery within a few hours. The grapes are then pressed whole, together with the stalks, an unusual but fundamental technique for achieving the high quality of Franciacorta wines.
The red grapes, on the other hand, are usually harvested towards the end of September; in this case, too, they are always hand-picked and immediately transported to the winery where they undergo traditional whole-bunch vinification and fermentation in stainless steel tanks, as well as remontage and délestage.
